Wine is dark enough that a wine screen gives off very little light — on an OLED or AMOLED phone the dim pixels also draw little power, which makes it a good always-on or bedside screen.
Its low blue-light output also makes it a comfortable screen to leave on at night.
Red screens are the classic choice for anything that has to stay visible without wrecking night vision — amateur astronomers, photographers in a darkroom-style setup and pilots use a dim red field to read by while their eyes stay adapted to the dark. A saturated red also lights only the red sub-pixels of a display, which makes it a fast way to spot a dead green or blue sub-pixel, and it doubles as instant stage, party or "alert" lighting.
As a test pattern, a dark wine field is best for spotting backlight bleed and IPS glow on an LCD, or stuck "always-on" pixels on an OLED.
